Black Bean and Avocado Vegan Quesadilla

  • Ingredients
    • 2 homestyle tortillas
    • 1/4 cup HERE Black Bean Dip
    • 1/2 avocado
    • 1/4 cup chopped fresh tomato
    • Drizzle of grapeseed oil
    • Salsa for serving
  • Instructions
    1. Take tortillas and spread HERE Black Bean Dip on one.  Mash avocado on the other one and sprinkle with chopped tomato.  Place halves together.
    2. Heat a large skillet with a drizzle of grapeseed oil.  Heat quesadilla on each side for about 30 seconds.  Slice into wedges and serve with salsa.
